As many of you know I’ve been on Weight Watchers for a while and have lost 60+ pounds. Yesterday in the Gumbo Shop I was sharing a recipe I have which is a variation on the Cabbage Soup. This makes a ton, it’s fairly healthy,easy to make and it’s only 5 points per 2 cup serving.

 

 

Get a big soup pot
10 to 11 cups of water
Spice with your favorite spices (I used garlic and onion powder, pepper and “soul food spice” – I swear that’s what the label says)
Bring to a boil
Add 1 large Beef Bouillon cube and the equivalent of 6 to 7 cubes of Chicken Bouillon cubes
after that boil for a couple of minutes
Add 1 small head of cabbage torn and chopped
7-8 baby carrots chopped

cook for about 10 minutes

(Now next is what I used, but you can use your favorites)
1 12 ounce bag of frozen Brussel Sprouts
1 12 ounce bag of frozen Southwestern Corn

Cook for another 10 to 15 minutes

Add 1 package of Ramen Noodles and mix (chicken), break up the noodles

Cook another 10 minutes or until noodles are really soft.
Serve, refridge the rest. Works for 1 person or 8, because you can freeze or eat for days.
