Crocking With Clint
1 package (a pound or so) of your choice sausage –
(I love gator sausage, but good with Conecuh (obviously), andouille – thinly sliced.
Whatever makes you happy)
1 onion, diced
3 carrots, peeled and diced
2 stalks celery, diced
3 cloves minced garlic
2 (15-ounce) cans Great Northern beans – drained and rinsed
½ tsp oregano
2 bay leaves
4 cups chicken stock
2 cups low-fat, sugar-free water (gotta watch that waistline)
3 cups baby spinach
Lightly brown sausage in olive oil (if necessary).
Try not to eat too much of it (that’s why I get a full pound)
Toss everything else in a 6-quart Crock Pot, stir it real well
Add seasonings as your palate dictates
Cover and cook 7-8 hours on low or 3-4 hours on high.
Stir in spinach, maybe add some shredded parmesan on top to make it look as pretty as my picture.
Share with your family, friends, the neighbors…or take some to the local fire station – they’ll love it!
Or just keep it for yourself, it’s quite good re-heated for lunch.
